GERMAN BEEF STEW

1 pound stew meat
2 teaspoons coconut oil or other good fat
1 apple, shredded
1 carrot, shredded
½ onion, chopped
½ cup beef stock
½ cup dry red wine
½ teaspoon anchovy paste
1 clove garlic
1 bay leaf
¼ teaspoon thyme
4 teaspoon cornstarch or other thickener
¼ cup water
 
Brown meat in fat.

Add apple, carrot, onion and sauté till limp.

Add broth, garlic, herbs and anchovy paste.

Cover and cook 2 hours or more.

Mix thickener with water and add to stew.  (optional - remove meat and boil down liquids until sauce consistency)

Serve over rice or noodles.
