HEARTY BEEF BARLEY SOUP

2 slices Meadow Haven Farm bacon, coarsely chopped
1 pound Meadow Haven Farm stew meat
1 cup chopped onions
2 cloves garlic, chopped
1 can tomatoes or 3-4 fresh tomatoes, chopped
1 cup sliced carrots
1 potato , coarsely chopped
1 cup pearled barley
4 cups beef broth
1 bottle dark beer (can substitute more broth)
½ tsp dried rosemary
½ tsp dried oregano
1 tsp good sea salt


In a dutch oven, sauté chopped bacon until fat is rendered and remove bacon from the pan, set aside.
 
Brown beef and onions, adding garlic at the end and sauté until garlic is fragrant.

Add back the bacon and the remaining ingredients.

You can either put this in a crock pot, put on low and left for the day, or cooked stove-top on low, for 3-4 hours (check and add more liquid as necessary), or put it in the oven at 350 degrees for 3-4 hours.
