2 pounds stew meat or round steak, cut in 1 inch cubes
1 large onion, chopped
3 cloves garlic, chopped
2-3 potatoes, cubed
3-4 carrots, thickly sliced
1 parsnip, thickly sliced
1 small (or ½ larger) winter squash, peeled, seeded and chopped into about 1 inch cubes
1 qt tomatoes or tomato juice
2 cups beef broth or hearty red wine
2 tsp good sea salt
3 tsp arrowroot mixed with ¼ cup water (optional)
In a large dutch oven, brown meat in batches and set aside.  This is so the meat does not cook in it’s own juices instead of browning.

Add onion and brown until soft. Add all other ingredients.

Cook 2-3 hours on the stove or in the oven or put in a crock pot for the day.
